Meal prep to help 2 weeks of knee surgery recovery

Mike R.
Active: 05 Oct

I am a 53 year old man living by myself. I am about to have knee surgery on Sept 24th and expect to have limited mobility for up to 2 weeks. I'd like to hire someone to come to my house and prepare meals for dinners for 1 week at a time for these 2 weeks. I have a Samsung gas range and 3 different sized cast iron pans, as well as a Le Creuset Dutch oven that i often use for meals. I also have a gas bbq and a komado joe smoker. General requirements: Make 7 individual dinner portions per week. Target approximately 45–60 g of protein per dinner. Keep portions satisfying but moderate in calories because I'll be considerably less active than usual. Emphasize whole foods: lean meat/fish, vegetables, legumes and sensible portions of potatoes, sweet potatoes, rice or other whole-food carbohydrates. Include plenty of vegetables and dietary fibre. Use healthy fats such as extra-virgin olive oil, avocado, nuts and seeds, but don't make meals excessively high-fat. I'm lactose intolerant, so avoid regular cream, milk and significant amounts of lactose. Lactose-free alternatives are fine. I like flavourful food—garlic, herbs, spices, Mediterranean, Asian, Mexican, Indian-inspired flavours and some heat are all welcome. I don't want bland “hospital food.” I like chicken, beef, pork, fish and seafood. Cooked salmon is good; no smoked salmon. Minimize processed meats, deep-fried foods, heavy cream sauces, excessive butter, added sugar and highly processed foods. Please don't make seven versions of chicken breast, rice and broccoli. Variety is important. Meals should reheat extremely well, since I'll have limited mobility and don't want to do any meaningful cooking. Ideally package each meal individually and label it with the meal name, date prepared, approximate calories and grams of protein. For food-safety/quality purposes, please identify which meals should be eaten first and freeze the meals intended for later in the week rather than leaving all seven refrigerated.
